Flank cut beef sh0rt ribs

This is one of the easiest ways to enjoy the taste of beef ribs with about half the time ( it is still going to take 3-4 hours).

I like a simple rub of fresh cracked pepper corns and sea salt with a drizzle of olive oil. Very simple and allows the beef taste to be prominent. Throw these on a hot, pre-oiled, grill and stand back to listen to the beautiful sizzle of searing meat. Sear both sides to brown and lower the heat to low (225F) close the lid and walk away. a simple mopping of beer, butter, and BBQ sauce every hour with a flip and these bad boys should be fall off the bone ready after 3 hours.

I use a cast iron wood chip box on my direct heat burners as the ribs cook over the other side of the grill.
